For Shopify specifically, I'd make “Minimal Grey” Heading 1, the major section titles Heading 2, the punchy supporting lines Heading 3, and everything else Paragraph. That will give you the large → medium → small visual hierarchy you're after rather than making everything bold and competing for attention.
And for the Blue version, keep everything identical and simply change Minimal Grey → Productive Blue. That consistency will make the two product pages feel much more polished.
